Apple & Cinnamon Muffins

Apple and Cinnamon Muffins

Ingredients

-1 Cooking Apple
-2oz Demerara Sugar
-6oz Plain Flour
-4oz Wholemeal Self Raising Flour
-1 and half Teaspoons Baking Powder
-1 Teaspoon Ground Cnnamon
-2 Eggs
-Quarter pint of Semmi Skimmed Milk
-Pinch of salt
-2 Tablespoons Sunflower Oil

Instructions

Peel, core and chop apple into small pieces and place in a pan. Add half of demerara sugar and cook for 5-10 minutes until soft, leave to cool slightly.

Sift both flours and baking powder into a bowl, stir in the ground cinnamon and salt. Add beaten eggs, milk and oil, and cooked apple to the flour mixture. Stir to until you get a soft batter. Divide mixture into 12 muffin cases and sprinkle a little demerara sugar over the top of each muffin.

Cook the muffins in centre of oven for 25 minutes at 170 degrees, until risen and golden in colour. Leave to cool and then they are ready to eat.
