Fruit Scones Recipe

Ingredeints

*8oz Self Raising Flour
*1 Teaspoon Baking Powder
*1oz Butter
*2oz Raisins
*Quarter pint of Milk
*1 Egg
*Pinch of Salt

Instructions

Sift flour, salt and baking powder into a bowl. Cut the butter into cubes and rub into the flour mixture until resembles breadcrumbs. Stir in the raisins and make a well in the centre. Then stir in enough milk to make a soft dough. Kneed lightly and roll out until 2cm thick, cut out four round shapes.

Place scones on a greased baking tray and brush with beaten egg. Cook for 8-10 minutes at 230 degrees, until risen and golden in colour.

Leave to cool then split the scones in half and spread strawberry jam over each base, then top with clotted or squirty cream and place tops of scones on each base.
