Chocolate and Orange Iced Sponge Cake Recipe

Ingredients

5oz Self Raising Flour
1 Teaspoon Baking Powder
5 Tablespoons Cocoa Powder
Juice and Grated Rind of 1 Orange
6oz soft butter/margarine
6oz Caster Sugar
Pinch of salt
3 Eggs

Icing Ingredients

12oz Chocolate (Orange flaboured Chocolate is optional)
Half pint of Double Cream

Instructions

Sift flour, salt, baking powder, and cocoa into a large bowl. Add 1 tablespoon of orange juice, the orange rind, sugar, eggs and butter, and whisk for approx 2 minutes until mixture is pale and fluffy.

Divide mixture between two greased sandwich tins (8in), making a well in each cake, and cook in oven for 20-25 minutes on 180 degrees.

Remove from oven and allow cakes to cool. Spoon remaining orange juice over cakes and allow to soak in.

For the icing, chop chocolate and place in a pan along with cream, bring to the boil. Remove pan from heat and leave to cool for 10 minutes, until melted. Stir until smooth, and cool until stiff enough to spread.

Sandwich cakes together using a third of icing and swirl remainder over top and sides of cake.
